Magdalena Trusinska is a PhD student at the Institute of Food Sciences, Warsaw University of Life Sciences (SGGW). Her PhD thesis is related to investigating the potential of protein-pectin complexes to improve the functional properties of 3D printing inks. Her research interests focus on 3D food printing, non-thermal physical treatments, and plant-based food materials. She actively participated in 4 research projects, two of which concerned plant-based fish alternatives using 3D printer. Also, she conducted scientific workshops on 3D food printing. She is a co-author of 10 scientific publications in JCR journals and 1 book chapter. In 2023, she was awarded EFFoST Student of the Year award, Students' Nobel Prize, and a scholarship of the Minister of Education and Science for students.
